Sweet Relish

This year I had an abundance of cucumber. I trolled around a few sites and found a recipe in a forum and the lady swore by it. I just remember copying and pasting the recipe to pepperplate. (An amazing app that you can post recipes, make a meal plan….and my favorite-a shopping list straight from the ingredients. I then check the items off that I have and bamb….I’m ready to shop).

I cut up all of my ends off my cucumbers and slice them lengthwise in quarters and put them through the ninja on slicer for sweet pickles. If you want relish chop them with the blender until they are the consistency you desire…..and follow the recipe.


4 cups ground cucumbers

4 large onions, ground up

4 green peppers, ground up

1 or 2 red peppers, ground up

1 tbls. Salt

4 tsp celery seed

2 tsp. Turmeric

1/2 tsp. Pepper

4 cups vinegar

4 cups sugar


Combine veggies and salt and let stand for 2 hours. Drain well, add rest of ingredients and cook slowly for 1 hour. Pack hot into hot jars and process in boiling water bath 15 minutes for pints.

makes 6-8 pints

You can see the pickles top right and the more finely chopped relish.
